GINNA PARSONS: Cornish hens pretty, tasty, easy to cook
It seems that everywhere I turn lately, I see recipes for Cornish hens. Mississippi Magazine featured one in its holiday issue and some woman on the Food Network was cooking some Saturday morning. I even picked up an old issue of Cooking Light from November 2002 the other day and it had a recipe for stuffed Cornish hens.
I really like to cook these little birds because they're tasty, easy to prepare and they look like you spent all day on them. But in the day-in, day-out grind of "what's for dinner?" I rarely think about them.
So when I passed the frozen foods part of the grocery store the other day and saw a bunch of these little hens, I grabbed up four of them. I let them thaw in the fridge for about three days because they were frozen solid, and they cooked up beautifully.
